Cupcakes fit for a queen.

So at work we are having a jubilee tea party at lunchtime today!
Last night I made these cupcakes using literally the quickest and easiest recipe I have ever come across.

You will need:
A measuring jug
An electric whisk/food processor ideally but i guess you can use a hand whisk.
A mixing bowl
Cupcake cases.
Various utensils (you know the drill)


INGREDIENTS:

2 eggs.
200ml (approx) of thick cream
8 FLoz of castor sugar
8 FLoz of self raising flour.

Makes about 12 - 24 cakes depending on the size of your cases!

Method:

0. PREHEAT THE OVEN GAS MARK 4
1. Crack the eggs into the measuring jug and top up the jug with the cream up to 8floz.
2. Whizz this mixture up for about a minute with an electric whisk.
3. Pour this mixture into a mixing bowl and add the sugar. Beat this for a couple of minutes until its all thoroughly mixed up. Add a couple of drops of vanilla extract.
4. Sieve the flour into the bowl and fold this in until its smooth.
5. Put this into paper cases and put in the oven for 20 minutes or until golden.

So easy, no creaming butter and sugar together. Lavely.
Hopefully they will go down very well at work. They went down very well at home anyway!
