Mouthwatering Salmon Stir fry recipe.

Please try this, you will not regret it, its B.E.A.UTIFUL.
I have been doing slimming world in the last couple of months and I have lost a stone. Thank you for all the applause.

Don't stop reading if you are sceptical about diets, because slimming world is not really a diet. Its just about eating healthily. So anyway I will get on with the recipe. Which by the way, if you are interested is 1.25 syns per person.

You will need:

4 salmon fillets
3 tbsp soy sauce
2 tbsp clear honey
zest and juice of 1 lemon
2 garlic cloves, thinly sliced
2.5cm piece of fresh ginger root, grated.
8 spring onions, finely shredded.

Stirfry veg:  I used Mangetout, thinly sliced carrots, baby sweetcorn and Long stem brocolli.

So, mix the soy sauce, honey, lemon, garlic and ginger in a small saucepan and heat for 4 minutes. Pour over the salmon in a shallow dish with the spring onions. Leave this in the fridge for at least 30 minutes. Apparently you shouldnt leave it longer than an hour as the salt in the soy sauce will begin to cook the fish.

Heat a griddle pan or a grill to high and grill/griddle the salmon. It took about 8 minutes, approx 4 minutes on each side. You'll know when it's done.

Then you make the stir fry, I used fry light but you can use sesame oil if you'd like to. Stir fry your veg for about 3 mins in a really hot wok, and then add the marinade from the salmon and blast for another 2-3 minutes. (Remember that its been marinading the raw fish)

And that's it... So easy, and you will literally want to lick the plate. (I did).

Unfortunately my camera died just as I was going to eat, and I couldn't let it go cold. But here's exactly what it looked like.
